I am not a 3D modeller, but I want to know how blueprints are helpful to one in creating a 3D model.

Also, is there any software available that can directly convert blueprints into 3D models?

Blueprints are used as references when creating 3d models.
You just follow the lines of front, side and top blueprints that makes the 3d modeling process much easier...

Regarding the software that can convert blueprints to 3d models never heard of such software. There are programs that can create basic 3d models from various photos.. but these programs need the 3d artist assistance anyway.
